The traditional national French dish is open quiche pies, which are famous for their piquancy and juiciness. Thanks to a special recipe, such a pie turns out to be unusually tender and soft. And the most delicate cream ricotta cheese gives the kisha with spinach a simply amazing taste and aroma. 

We present a recipe for kish with spinach, which you will certainly like and will become one of your favorite treats. 

Quiche with spinach and cheese can be served hot for a light dinner or taken as a snack for a family picnic. 

At the same time, the recipe for quiche with spinach and cheese is not particularly complicated. If you clearly follow our instructions, even a beginner in the culinary business will be able to cope with the preparation of kish with spinach.

Mix the sifted flour with parmesan, add cold chopped butter and grind into crumbs. Add the yolk, sour cream and, gradually adding water, knead the dough, trying to do it as quickly as possible. Form a ball from the dough, wrap it with cling film and put it in the refrigerator for about 30 minutes. Blanch spinach in boiling water for 2-3 minutes, flip it into a colander and squeeze out excess liquid. Chop the cooled spinach.

Preheat the oven to 180C Roll out the finished dough between the sheets of parchment and spread over the bottom of the mold, forming the sides. The dough must be pricked with a fork and put parchment with a load (beans or peas) on top, bake for 15 minutes, remove the load and put in the oven for another 5 minutes, the dough should turn out crispy and ruddy.

Beat the ricotta with a mixer. Enter two eggs alternately, after each punching again with a mixer. Gradually introduce cream, add grated parmesan (leaving a little to sprinkle), salt, pepper and spinach.

Pour the cheese filling with spinach on the cooled cake, sprinkle with parmesan and bake at 175C for 30 - 40 minutes. Cool the finished quiche for 10 minutes and serve. Enjoy your meal!
