Mimosa salad with green beans and apple mayonnaise

Peel the apples, remove the seeds, slice and cook under a lid with a little water until soft. Drain the water from the soft apples. Weigh the apples, you should get 250 g of mashed potatoes. Beat in a blender.

Add mustard, salt, vinegar to the cooled puree, and whisk in a blender. Then gradually pour in the oil (about 1 tbsp.l.) and beat each time until the mixture is completely smooth. Let the mayonnaise stand in the refrigerator for 1-2 hours.

Boil the potatoes and egg. Cool and clean. Boil the beans in boiling water for 10 minutes. Also cool down. Grate the potatoes on a fine grater. Chop the beans. Put the potatoes in a salad ring or any bowl. Tamp the chopped beans on top. Lubricate with mayonnaise.
