Panacota with lavender and blackberry sauce

Pour milk, cream into a ladle, add sugar and lavender flowers and bring the milk mixture to a boil. Simmer for about 5 minutes, set aside for 10-15 minutes to cool.

Soak gelatin in cold water. When the gelatin swells, squeeze it out and dissolve it in the milk mixture, stirring until completely dissolved. Strain the mixture through a fine sieve, pour into glasses (or molds) and put in the refrigerator until completely solidified for an hour and a half.

Sauce:
Set aside a couple of berries for decoration. Pour the blackberries into a saucepan. Stir, defrost, add powdered sugar and boil for a couple of minutes. Wipe the finished puree through a sieve and cool.

Pour the frozen panacota with blackberry sauce. Decorate with blackberries and lavender. Enjoy your meal!
